Eggless Chocolate Strawberry Cake

I am a sucker for chocolates and F for strawberries, and they are a pair made in heaven. I meant the chocolate and strawberries pairing 五 An eggless chocolate cake with some juicy strawberries that came out of the cake pan was the best-looking cake I ever made and the beginning of much more stove-top baking! 

You know by now I own no oven here. And several attempts of making a cake in a microwave were not always successful. I knew my mom used to bake cakes in a pressure cooker or pot but I never gave heed to knowing how to do it. Necessity is the mother of invention or in this case discovery... because I had to research on the net, and talk to mom and sisters to find the best way to bake on a stove-top. 

Chocolate Strawberry Eggless Cake


Strawberry mixture
  • 8 to 10 ripe strawberries 
  • 2 tablespoons sugar
Dry Ingredients
  • 1/2 cup wheat flour
  • 1/2 cup all-purpose flour/maida
  • 3 tablespoons cocoa powder
  • a pinch of salt
  • 1/2 teaspoon baking soda
Wet Ingredients
  • 3/4 cup sugar
  • 3/4 cup cold water
  • 1/4 cup olive oil or melted butter or any cooking oil
  • 1 tablespoon lime juice or apple cider vinegar
  • 1/2 teaspoon vanilla essence or vanilla sugar
Butter or non-stick spray to grease the pan


Prepare the Strawberry Mix
  1. Mix the chopped strawberries and sugar in a bowl 
  2. Microwave for 2 mins or cook it on the stovetop until softens 
  3. Let it cool
Prepare the Preheating on Stovetop
For oven users: Preheat the oven to 200 degrees Celsius/392 degrees Fahrenheit.
  1. Keep a flat tawa on a medium flame 
  2. Keep the pressure cooker big enough for your cake pan to be placed inside
  3. Cover the pressure cooker with its lid but remove the weight
Prepare the Cake Pan
  1. Ensure to use a cake pan that fits into your pressure cooker (8 inch round pan should work)
  2. Grease the cake pan with butter or oil on all sides. 
Prepare the batter
  1. Take a medium bowl and sieve all the dry ingredients 
  2. Take a large bowl and dissolve the sugar in cold water 
  3. Add olive oil, lime juice, and vanilla extract and mix thoroughly
  4. Now add the sieved dry ingredients into the wet mixture 
  5. Using a wired whisk, whisk the batter to ensure no lumps. (the batter will be thin)
  6. Pour the batter into the greased pan and tap it a few times on the counter to break any air bubbles
  7. Fold in the Strawberries mix (Do not mix too much, just FOLD in and do NOT tap after this)
Bake the Eggless Chocolate Strawberry Cake

Oven users: Bake for 35 to 40 mins. 
  1. Slide the pan into the Pressure cooker
  2. Close the cooker with its lid and do not use the Weight/Whistle
  3. Keep the flame to medium to low and let it bake until you will see droplets of water popping out of the nozzle where you insert the weight - once this happens then wait for 5 more minutes - you will start getting the aroma of the cake (Around 45 to 50 mins)
  4. Open and do the toothpick test and bake more if required
  5. Remove the pan from the cooker and let it cool
  6. After 15 to 20 minutes, you will see the cake detached from the sides, then flip the pan onto a plate and there you have a neatly baked cake! 
  7. Flip back to the top side and you can choose to add frosting or ganache or whipped cream or just decorate with fresh strawberries etc.  
I adapted this recipe for the egg-less chocolate cake.
