Masala Macaroni with Chicken and Vegetables

Macaroni, every nation has a macaroni recipe that they are proud of and we Indians have found not one but several ways to use it in our cuisine. From biryani to Pola, from payasam to kai curry, there is nothing this elbow pasta can't make better. Here is a very Indianish macaroni with vegetables and chicken or ground meat recipe.

Masala Macaroni with Chicken and Vegetables

The recipe ratio is not rigid, you can add more or reduce the total veggies, chicken or just add a scrambled egg at the end. I like to retain the vegetable colour so I tend not to over-cook them. The moisture from the veggies and the chicken is enough to get them cooked.

Masala Macaroni with Chicken and Vegetables

INGREDIENTS

1 cup elbow pasta, cooked as per packet instructions

1 tablespoon ghee or butter
1 cardamom pod
1-inch cinnamon stick
2 cloves
1 small bay leaf
1/4 cup mint leaves chopped
2 chicken breasts cut into chunks OR 1 cup ground meat

1 large onion, thinly sliced
1 to 2 cups mixed veggies (carrots, beans, frozen green peas, capsicums, potatoes, zucchini)
1 1/2 teaspoon ginger garlic paste
1 tablespoon tomato paste
1/4 teaspoon turmeric powder
1/2 teaspoon red chilli powder
1 teaspoon coriander powder
1/4 cup of water

1/2 teaspoon garam masala
2 tablespoon lemon juice
1/2 cup fresh coriander leaves chopped

METHOD

  1. Cook and drain the pasta as per the packet instruction 
  2. Heat ghee or butter in a deep pot
  3. Add the listed whole spices and fry for a few seconds
  4. Add the mint leaves, chicken pieces, sliced onions, ginger-garlic paste, and tomato paste
  5. Sauté this for one to two minutes on high flame
  6. Add the veggies and saute it for a couple of minutes 
  7. Reduce the flame to low and add all the spice powders except for the garam masala and mix well 
  8. Add up to 1/4 cup of water and cover and cook for 4 to 5 minutes or until all the veggies and chicken is cooked through
  9. Use a wooden ladle to fold in the drained pasta into the prepared mixture 
  10. Once each pasta is coated well, sprinkle garam masala and lemon juice 
  11. Fold in the freshly chopped coriander leaves 
  12. Serve warm
