Month that was, December 2018
Yay! We are finally in December, the month we tend to look back to see how far we have come in our lives. I personally had a very eventful year with cats and food! My blogging was pushed to the back burner and I gave the time to actually enjoy quantified cooking, feeding my fur boys and living with them all day. Most of the posts this year were all published backdated because I wanted to keep the events relevant to the time and hopefully get the recipes also published soon.
I know I have neglected this space and focused only on Instagram and it is not fair that I expect all my blog readers to have an Instagram account. So, I will try to update this space with all the recipes that are residing on Insta Highlights and posts. InshaAllah!
So let me dive into this month's highlights! As usual with all my monthly posts, I will be sharing the highlights in chronologically but they may have appeared on Insta on different dates.
One Pot Chicken Kabsa!
#throwback to my #yanbudays #lunchbowl 😋and this time it is the classic saudi Chicken #Kabsa 🤤There are at the least three types of kabsa that I have eaten and they all taste different 😆So this is one pot rice dish heavy on tomato. Kabsa is apparently the #nationaldishofksa but I wish it was the #bedouinlambrice 😋 Served with lots of fried almonds and raisins - and yogurt garnished with #sumac. Blender Banana Bread with Nigella Seeds
I promise! This is the last of the food pics from my #yanbudays 😬 I made this #bananabread using a blender to mix the wet ingredients because I was lazy to reach out for my electric hand blender and etc. 😄 So, here is my #blenderbananabread with my most favourite flavour #nigellaseeds that you have to include if you have them! Blender banana bread with nigella seeds Wet Ingredients: 1 super ripe banana 🍌 1/4 cup oil 1/4 cup brown sugar 1/4 cup granulated sugar 1 small egg 1 teaspoon vanilla or banana essence 1/4 cup milk Dry Ingredients: 1 cup flour (maida) 1 1/2 teaspoons baking powder 1/4 teaspoon baking soda 1/2 teaspoon cinnamon powder 1/4 teaspoon salt 1 teaspoon nigella seeds METHOD: 1. Preheat oven to 350 degrees or prepare your trusted stove top baking method. 2. In a blender, blend together bananas, oil, both kind of sugar, eggs, and vanilla. 3. Blend until smooth. 4. Add milk and blend until combined 5. In a large bowl, whisk together flour, baking powder, baking soda, salt and cinnamon. 6. Pour the wet mixture into the bowl and fold until combined 7. Divide the batter into a buttered or greased two 5 x 3 inch loaf pan. 8. Bake for 40 to 50 minutes or until a toothpick comes out clean. 9. Let cool for about 15 minutes and carefully remove loaf from pan. 10. Throwback to yet another lunch bowl that I had cooked while back in Yanbu. #Alhamdulillah Nothing beats a homemade #sambar ! 🤤The secret of the deliciousness of my sambar recipe is that there is no recipe! 😆 It all boils down to the #sambarpodi and #tamarind 😋and of course the #tadka I served with #beetroot stir fry and a dollop of my #limepickle 🤤🤤🤤 I have always used store bought sambar podi and never felt the need to make at home. Sakthi and kitchen treasures gives yummy sambar! Healthy or not... #homemadegranola is a thing! You will never say no to oats again! A perfect option for #ediblegifts during any time of the year! 😄 Honestly, I hate this as much as I love because I just can’t seem to control portion... It doesn’t last two days for us 😆 This is my most favourite granola recipe and the secret ingredient is #eggwhites 😍 I had shared a detailed recipe long ago on highlights under Trail Mix Granola! I have tried with peanut butter and biscoff! ...there is no end to possibilities...build your own #granola with your favourites.

Recently we had dinner at a new restaurant @saniorita.restaurant which replaced our favourite Amwaj restaurant 😫 Anyways, the menu is highly continental and their charges are also upscale. Quantity of each dish was just enough for one. I have added the picture in the order of my most favourite to least... 1. The spread 2. Mr F 🤪 3. Beef kebabs 4. Chicken sizzler 5. Dynamite shrimp 6. Salmon grilled - couldn’t finish this. The ambience, service and the food was great. It tasted good but could be better. I intended to make tiny donuts but had no time for the second rise... Recipe adapted from Laura in the Kitchen. F said that they look like onion rings and I can't agree more! :-D

I will miss you Zaatar
We have been looking for adopters for all three of my boys because it is now confirmed that F will be relocated to a new city on a new project. I love all three equally but I love Zaatar a little more. It is not fair to separate them so I decided to give up all three to one adopter if possible.

It was Christmas week and we had no lead to even a single adopter. F had to join the new location by Jan first week. Nothing but my dua was answered through a doc who was on vacation in Germany but still worked through her contacts and arranged an initial foster home. Everything worked so well for us and though my heart aches the
30/12/2018 With a lot of help from a few people, we found a new foster home for all our boys. We drove them down to their new haven with their belongings. I am sure they will adapt soon but I will miss them for life. While they start to settle in new place, we are also heading to a new nest far away. Thank you @hisham_hameed directing me to Dr Ingrid.

After dropping our cats to the new foster family's home, we were heading back to Yanbu, we deviated to visit the Prophet's masjid for one last time before next time InshaAllah.
