Bourbon Biscuit Crusted Cheesecake Jars

I shy away from sharing too simple dessert recipes because I assume who wouldn't know this? But I see established bloggers sharing such simpler recipes so who am I not to? 😜 Even though F and I are sweet-toothed (he more) we don't indulge too often knowing that it is not a great habit for our ageing body. Not to forget that I don't have too many mouths to feed sugary treats so a tried and tested dessert recipes are only a few in my blog. I want to change that and learn to be less perfectionist by posting simple recipes that also serve as an idea to be inspired from.

Now, if you came here expecting bourbon whiskey-infused cheesecake, I am sorry, this is 100% halal food blog but read further as it may help you to know a bit about bourbon biscuits!

What are Bourbon biscuits?

Bourbon biscuits are chocolate sandwich biscuits with a chocolate cream filling. Nope, despite their name, there is no added alcohol nor is this made by the whiskey company. Bourbon biscuits were a treat during my childhood which means we don't get to eat it every day like milk-bikis or Marie. But when there is a pack of bourbon biscuits, they vanish quicker. I think it is safe to say that Bourbon biscuit is my Oreo. 😁 Though the images show two of my favourite brands, I would like to state that this post is not sponsored

I read up a few articles and thought this article by Biscuit People covers everything about this bourbon biscuit that you will be amazed to learn.

Let's talk about this no-bake cheesecake jar! No-bake cheesecake jars are indeed an easy dessert to whip up for two or twenty in a short time. You don't have to turn on the oven but may have to turn the stove or microwave to melt the butter. You only need a handful of ingredients and some cute little jars. Individual desserts are the best way to portion control if you are a sweet-toothed and don't know when to stop (like us).

Any no-bake cheesecake in jars (I actually never liked the fact we call this cheesecake, cream cheese parfait would be more appropriate. But then, I got to go with the norm.) will usually have two or three layers. The biscuit crust, cream cheese filling, and topping along with optional garnish.
  • Bourbon biscuit: It is chocolate cream sandwiched with a cocoa biscuit with sugar sprinkled. You may use any similar cookies or even oreo.
  • Cream cheese: I have used the Almarai squares not the spread. You can use any other brand but make sure you pick "cream cheese blocks" and not the spreadable ones.
  • Condensed milk: You can whip up this dessert with any leftover sweetened condensed milk sitting in your refrigerator. You may use whipped cream instead but you will have to add sugar to the cream cheese mix.
  • Labneh: You know my love for labneh and laban! Labneh is the hung curd of the middle east. You may use thick plain Greek yoghurt or sour cream in the place of labneh. You may even skip this if you are not a fan of the Original Cheesecake Factory cheesecake.
  • Orange zest: Usually it is lemon zest, but I figured orange and chocolate goes hand in hand (not a real fan though)
I have shared a similar no-bake recipe like my Raspberry Cream Cheese Parfait with homemade raspberry compote, Dried apricot pudding cheesecake shots (where the pudding is mixed into the cream cheese mixture) and Strawberry cheesecake in a pie dish with homemade strawberry coulis. This recipe is not very different from them which means, you can use this recipe and tweak it to make it in million different ways. That is what I love about no-bake mini cheesecake.

Bourbon Biscuit Crusted No-Bake Cheesecake Jars Recipe

INGREDIENTS

For the Bourbon Biscuit Crust
  • 6 to 8 Bourbon biscuits
  • 1 tablespoon melted butter
For the filling
  • 108gms or 6 squares of cream cheese, room temperature*
  • 3 tablespoons of sweetened condensed milk
  • 1 tablespoon labneh (optional)
  • a pinch of orange zest
For topping
  • Bourbon biscuits or Nutella or chocolate ganache, or you may skip topping!
* If using the al marai or Kiri squares, unwrap them and then let it come to room temperature.

METHOD

Prepare the crust
  1. Place all the bourbon biscuits in a zip-lock or plastic bag, and crush them with a rolling pin to fine crumbs.
  2. Transfer the biscuit crumbs into a bowl and stir in the melted butter until well combined.
  3. Divide the crumb mix into 2 or 3 serving glasses. Use a flat bottomed cup that easily fits into the serving glass to press the crust flat.
  4. Chill this crust in the fridge for at least 15 minutes.
Prepare the cream cheese mix
  1. Whisk the softened cream cheese cubes on medium-high speed until smooth. Whisk in the condensed milk, labneh (if using) and the zest until everything is combined into a smooth mixture.
  2. Divide the filling into the chilled crust serving glasses evenly and smooth the top with a spoon. Cover with plastic wrap, and refrigerate until chilled.
Serve Bourbon Biscuit Crusted Cheesecake Jars
  1. Before serving, top with bourbon biscuits, or any chocolate toppings. Dig into the cream cheese rich cheesecake and enjoy a romantic dessert.
