Chapathi Omelette | An Easy Egg Paratha

I like to call this Chapathi Omelette even though technically it is Egg Paratha :-P This would be a no-recipe recipe, which means you can make your favourite omelette mixture and use a leftover chapathi or tortilla to make this mid-morning breakie.

Sharing today's recipe as part of a monthly challenge event - Fantastical Food Fight. The event fell off my radar due to the relocation from Saudi to UAE and all that but recently resurfaced when I took notice of this month's challenge invite. I decided to take part this time as the theme was Omelette! I was laughing thinking how eggs find me! I had a stint with the LCHF diet for a few months and had consumed omelettes for the lifetime! :-D So much so that I took a break from eggs but not for too long because I love eggs!

When I shared Insta stories I was not expecting any reaction but was overwhelmed with the love it received. I had to share step by step the same week and it still remains one of the best recipes that new moms and students love to make.

I compiled all the videos and pictures I had shared on Insta stories into a Youtube video for ease.

Chapathi Omelette | An Easy Egg Paratha Recipe


  • 1 to 2 eggs
  • 1 to 2 green chilli
  • 1 tablespoon finely diced red onion
  • 1 tablespoon finely diced red bell pepper (or any veggies like carrot, tomato, zucchini, etc.)
  • a fistful of greens (coriander or parsley or spinach etc.)
  • salt and pepper (add less salt if using feta cheese)
  • a dab of ghee or butter for frying omelette
  • 2 to 3 cubes of feta cheese or any cheese of your choice
  • 1 chapathi or tortilla 
  • a dab of ghee or butter for roasting the flatbread


  1. Grease the pan with ghee or butter and heat on a low flame.
  2. Add the omelette ingredients into a large bowl and whisk until no visible strands of egg. 
  3. Pour the egg mixture into the hot pan and spread it to a thin layer.
  4. Scatter the cheese over the omelette while the eggs are still raw.
  5. Place the chapathi over this omelette and press down. The cheese and raw egg will adhere to the bread. Cover and cook so the omelette cooks and the bread warms up. 
  6. Open and spread some ghee over the chapathi and then flip it.
  7. Let it get roasted for a few seconds and then fold the chapathi to encase the omelette inside. Flip a few times until crispy.
  8. Transfer to the cutting board, slice into two halves and serve hot.
