Low Carb Chocolate Cake with Ganache

A single layer low carb chocolate cake made with gluten-free flours, sweetened with honey, frosted with rich whipped ganache and garnished with chopped almonds.

Don't go by the looks of the cake! Through an experiment, it turned out to be a delicious one. I baked this low carb chocolate cake with whipped chocolate ganache for my neighbour's birthday, apparently 60th in September 2020! I had to try a low carb cake so that her diabetic husband too can enjoy the treat. This cake is totally inspired and adapted from Lazy Girl Blog's Best Keto Chocolate Cake Ever recipe. I had bookmarked this recipe during my keto stint but never got to try until this time. But guess what? I ran out of stevia so had to use honey instead because pandemic? Yeah, we have something to blame everything on. 😭I then modified the method based off my Chocolate Cake recipe that used hot water in the batter. This is definitely the best and most delicious low carb cake I ever made. Thanks to the birthday girl who gave us a small portion to take home! It is low carb but super heavy so a small wedge would fill you up.

My email subscribers were informed that I would be off the blog and social media for some time because we had my mom stay with us for a few weeks. That reminds me I haven't been writing many personal updates here. InshaAllah, hope to get back to posting small snippets of life. I have so many recipes to share yet nothing that can match the December vibe that some of my fellow bloggers bring on the gram. So as soon as my mom went back to Sharjah, I ransacked my draft folders looking for one decent dessert recipe that I could share before the years ends. It was this cake or the one-bowl cake that is still on my Highlights. I decided to share the low carb cake because we already have done enough and more damage to our bodies this year with the pandemic. So, bake a cake, sit and eat as much as you want because 2021 may not change the situation but we sure can start looking at it differently. Enable us to acquire new skills and nurture our body with the best.

As the cake baked perfectly, the ganache whipped perfectly good looking, I took the plunge to take the whole cake to her home and surprise her. I did have a wee bit fear that whispered into my head, "what if it is not tasting good?" "She would never say the truth" "Will she give me a slice to taste?" The conversation in my head went on when I had already reached her living room where she was Zooming with her both her sons back in India. All praise for the cake even before anyone would taste it 😂 She cut the cake while her family watched through Zoom and we sang the HBD song. I am thrilled my surprise cake made it to her happiest day. We had breakfast together and before I left, we ate some more of the cake and she also gave a portion for F to taste later. I am shameless to say that I never believed the cake would taste so good! I regret doing a shabby frosting and garnish work but you all know never to judge a home-baked cake by its look! 😁

Low Carb Chocolate Cake Recipe

INGREDIENTS

Dry Ingredients:

  • 1 cup almond flour
  • 3 tablespoons coconut flour
  • 3 tablespoons oats flour* 
  • 1/3 cup unsweetened cocoa powder
  • 1 and 1/2 teaspoons baking powder
  • 1 and 1/2 teaspoons instant coffee
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
* Make your own oats flour by processing oats at home. If you are not diet restricted, then I would recommend using whole wheat flour instead of oats flour. 

Wet Ingredients:
  • 1/4 cup melted butter 
  • 1/3 cup honey
  • 2 large eggs
  • 1/2 teaspoon vanilla extract
  • 1/4 cup buttermilk (full-fat laban)
  • 1/4 cup hot water
For Ganache:
  • 100gms unsweetened chocolate*, chopped 
  • 1/4 cup heavy or whipping cream
  • 2 tablespoons honey 
  • 1/4 teaspoon vanilla extract
*Make your own chocolate by whisking 10 tbsp cocoa with 56gms softened butter in a bain-marie or thick-bottomed saucepan. 

For Garnish:
  • I used some finely chopped almonds but please be more creative than me! 😆

METHOD

Bake the low carb chocolate cake:
  1. Line an 8 inch round cake pan with baking paper and preheat the oven to 145℃.
  2. Take a medium mixing bowl and add the flours, cocoa powder, baking powder and soda, coffee and salt. Whisk to combine. 
  3. Take a large mixing bowl and using an electric whisk, whisk the butter, honey, eggs, and vanilla until light and fluffy. 
  4. Add the buttermilk and half of the flour mixture and whisk again. Add the remaining flour mix along with hot water and whisk until combined. 
  5. Pour the batter in the lined cake pan using a rubber spatula and bake in the middle rack for 25 minutes or until a toothpick comes out clean from the centre. 
  6. Remove and let it cool in the pan for 10 minutes. Flip and remove the cake from the pan and let it cool on the rack completely. Use the ganache only on completely cooled cake. 
Prepare the chocolate ganache frosting:
  1. Place the chopped chocolate in a large mug.
  2. Combine whipping cream and honey in a saucepan over medium flame, and bring this to a simmer.
  3. Pour the hot liquid over the chopped chocolate and let sit about 5 to 8 minutes which will melt the chocolate. Whisk to combine and let cool to room temperature before you can whisk.
  4. Use a hand-held mixer and beat on medium-high for 3 minutes or until light and fluffy.
Assemble the cake:
  1. You may slice the cake into two thin halves but I chose to keep it as is. Coat the top and sides of the cake with the prepared ganache and garnish with chopped almonds. 
  2. Let it sit for 20 minutes or refrigerate until needed. Slice and serve! Make sure to wipe the knife clean between slices.
